Vikki's Tips
4 c. cooked rice, cooled 1 c. frozen peas, thawed 2 Tbsp. finely grated carrot 3 eggs, beaten 1/2 c. diced onion 3 Tbsp. butter 4 Tbsp. soy sauce (more or less according to taste) salt and pepper to tasteAllow rice to cool to room temperature. Scramble eggs into small pieces in small pan over medium heat. Add peas, carrot, eggs, and onion to rice. Carefully toss together. Melt butter in a large frying pan or wok over medium-high heat. Dump rice mixture into pan; add soy sauce and salt and pepper to taste. Cook rice for 6-8 minutes, stirring often. Note: to serve as a main dish, add chicken, beef, or shrimp.

2 cups water 1/4 cup tomato sauce 1/4 cup "Thick n Chunky" salsa pinch salt 1 cup uncooked riceIn med saucepan combine water, tomato sauce, salsa and salt. Bring to boil stir in rice and reduce to low heat. Cover and cook 18 minutes or until liquid is absorbed. Fluff with fork and let stand 2 minutes. Serve
