All-Bran Muffins (category: homemade breads)

1 1/4 cups all purpose flour
1/2 cup sugar
1 tbsp baking powder
2 cups Kelloggs All-Bran cereal
1 1/4 cups milk
1 egg
1/4 cup vegetable oil
cooking spray
Stir together flour, sugar, baking powder, and salt. Set aside. In large mixing bowl, combine Kelloggs all bran cereal and milk. Let stand 5 min or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion batter evenly into twelve muffin pan cups coated with cooking spray or in paper muffin cups.
Bake at 400 degrees for 20 minutes. or until lightly browned serve warm. Yield 12 muffins
Glazed Cinnamon Breakfast Loaf (categories: breakfast, bread), submitted by Alta Colbert
1/4 cup packed brown sugar
1 1/2 tsp ground cinnamon
3 cups Bisquick baking mix
1/2 cup granulated sugar
1/3 cup Gold Medal flour
1 egg
1 cup milk
1/2 cup raisins (opt)
1/2 cup nuts (opt)

Heat oven to 350 grease and flour loaf pan 9x5x3 Mix brown sugar and
cinnamon; reserve. Beat baking mix, granulated sugar, flour , egg and
milk in large bowl on low speed., scraping bowl frequently, 30 seconds.
Beat on med speed, scraping occasionally, 3 minutes. Stir in raisins,
nuts pour 1/3 of batter into pan sprinkle with about 3 tbsp reserved
brown sugar mix repeat 2 times with remaining batter and brown sugar
mixture. Bake until wooden pick inserted in center comes out clean.
55-60 minutes. Cool 10 minutes remove from pan. Cool completely and
drizzle with glaze of 3.4 cup powdered sugar, 1 Tbsp margarine or butter
softened 3/4 tsp vanilla and 2-3 tsp hot water or milk until smooth and
desired consistency.
