High Fiber Diet Chocolate Cookies (category: cookies)
1 box (15.1 oz.) low-fat fudge brownie mix
2 1/2 c. unprocessed wheat bran
1 c. calcium and vitamin-C enriched orange juice
Preheat oven to 375F. Coat 2 baking sheets with non-stick cooking spray. In medium bowl, combine brownie mix, bran, and orange juice. Drop by 2 tablespoonfuls 2" apart onto baking sheet. Bake 10 minutes (centers will be soft). With metal spatula, remove to wire rack. Cool. Store covered.

Makes 24 cookies. Per cookie: 91 cals, 1 g. fat, 3 g. fiber


Susan's No Bake Peanut Butter Cereal Treats (category: cookies)
INGREDIENTS:

1 Cup pancake or waffle syrup.
1 Cup white sugar
1 Cup peanut butter
5 Cups of Cheerios or Cornflakes.
DIRECTIONS
Pour syrup & sugar into a large pot on stove top. Bring to light boil syrup and sugar, stirring constantly. Let boil for two minutes, always stirring. Remove from heat and add peanut butter, mix well. Add cornflakes or Cherrios. Drop by large spoonfuls onto a non stick metal surface. (not wax paper as the paper sticks to treats). Let cool for 15 minutes. Makes about 20 medium sized treats.

(Makes 24 bars)

Crust:

2 cups flour
1 cup butter
1/2 cup confectioners' sugar

Topping:

4 eggs
1/3 cup lemon juice
1/2 tsp baking powder
2 cups sugar
1/4 cup flour
Preheat oven to 350=B0. Sift together flour and confectioners' sugar. Cut = in butter till mixture clings together. Press into a 13"x9" pan and bake for 20-25 minutes or until lightly browned. While crust is baking, prepare topping by beating eggs together with the sugar and lemon juice. Sift = flour and baking powder together and stir into egg mixture. Pour topping over baked crust and bake for an additional 25 minutes. Cool completely - sprinkle with confectioners' sugar and cut into squares.
