Cheddar Baked Potato Slices (category: vegetables)
1 can condensed cream of potato or cream of mushroom soup, undiluted 1/2 tsp. pepper 1/8 tsp. paprika 4 medium potatoes, cut into 1/4-inch slices 1 c. shredded Cheddar cheeseIn a small bowl, combine soup, pepper, and paprika. In a greased 2-quart oblong baking dish, arrange potatoes in overlapping rows. Sprinkle with cheese; spoon soup mixture over cheese. Cover with aluminum foil; bake at 400 degrees for 45 minutes. Uncover and bake 10 minutes longer or until potatoes are tender.
Sliced Baked Potatoes (category: vegetables)
4 medium potatoes 1 tsp. salt 2 - 3 Tbsp. melted butter 2 - 3 Tbsp. chopped herbs of choice (such as paprika, Mrs. Dash, etc.) 4 Tbsp. grated cheddar cheese 1 1/2 Tbsp. parmesan cheesePeel potatoes and cut into thin slices, but not all the way through. Put potatoes in a baking dish and fan them slightly. Sprinkle with salt and herbs, and drizzle with butter. Bake at 425F for about 50 minutes. Remove from oven and sprinkle with cheeses. Bake another 10-15 minutes.
Crispy Potato Wedges (category: vegetables)
4 medium potatoes 1/4 c. cornflake crumbs 2 Tbsp. grated Parmesan cheese 1 tsp. dried parsley flakes 1/2 tsp. salt 1/8 tsp. pepper 1/4 c. butter, meltedPreheat oven to 400F. Cut cleaned potatoes in 8 lengthwise pieces. In a pie plate, combine cornflake crumbs, Parmesan cheese, parsley, salt, and pepper. Dip potatoes in melted butter, then coat with crumb mixture. Place potato wedges on baking sheet. Bake 15-20 minutes, or until tender.
Candied Sweet Potatoes (category: vegetables)
4 sweet potatoes or yams, boiled (approx. 30 minutes...slip the skins off after boiling) 8 Tbsp. butter 2/3 c. brown sugarPreheat oven to 350F. Cut sweet potatoes lengthwise into strips. Place in buttered baking dish. Melt butter in skillet or microwave, add brown sugar, and stir until dissolved. Pour mixture over potatoes. Cover and bake approx. 45 minutes.
Onion Flavored Potato Dish (category: vegetables)
6 potatoes (unpeeled and diced) 1 c. water 1/2 c. butter (melted) 1 pkg. dry onion soup mixMix water, butter, and soup mix together. Layer potatoes in greased 9x13 inch pan and pour mixture over potatoes. Bake at 350F for about 45 minutes (or until tender).
