1 lb. ground beef 1 c. barbecue sauce 1 c. shredded cheddar cheese 10-oz can refrigerated bisuits (10-12)Preheat oven to 400F. Brown ground beef and drain. Return ground beef to the skillet, then stir in barbecue sauce. Let simmer for 5 minutes. Spray muffin tins with Pam. Place biscuits in muffin tins, pressing to cover bottom and sides. Spoon about 1/3 c. of meat mixture into each biscuit and sprinkle with cheese. Bake for 12 minutes, or until golden brown.

Cut off the top of the french bread and pull out inside of loaf, making a shell. Stir barbecue sauce and bread crumbs into ground beef. Pour this mixture into loaf shell and spread evenly. Cover with cheddar cheese and put top of loaf back on. Wrap in foil and bake at 350 degrees for 20 minutes. Slice for individual servings.

Combine the eggs, milk, bread, salt, pepper, and ground beef in a large bowl; mix well. Shape into a loaf to fit loaf pan. Place in the pan. Bake for 45 minutes. Combine the brown sugar, mustard, and tomato sauce in a bowl. Spoon some over meatloaf. Bake for 30 minutes longer. Let stand 10 minutes before slicing.

1 1/2 lbs. ground beef 3 slices bread, torn into small pieces (or 1/2 c. dry bread crumbs or 3/4 c. quick-cooking oats) 1 egg 1 c. milk 1 small onion, chopped (about 1/4 c.) 1 T. Worcestershire sauce 1 t. salt 1/2 t. dry mustard 1/4 t. pepper 1/4 t. rubbed sage 1/8 t. garlic powder 1/2 c. catsup, chili sauce or barbecue sauceMix all ingredients except catsup. Spread mixture in ungreased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches, or shape into loaf in ungreased rectangular pan, 13x9x2 inches. Spoon catsup over top. Bake uncovered in 350* oven until done, 1 to 1 1/4 hours. Remove from pan.
Shelley's Meat-and-Potato Pie (category: ground beef)
Prepare Meat Loaf as directed except - spread beef mixture in ungreased pie plate, 9 x 1 1/4 inches. Omit catsup and decrease baking time to 40 to 50 minutes; drain. Prepare mashed potato mix as directed on package for 4 servings. Spread hot potatoes evenly over beef mixture; sprinkle with 1/2 c. shredded Cheddar cheese. Bake until cheese is melted, 2 to 4 minutes.
6 servings; 475 calories per serving.
Crockpot Beef Stroganoff (category: ground beef)
1 lb. beef stew meat 1 can cream of mushroom soup 1 envelope dry onion soup mix 1/4 tsp. pepperCombine beef, soup, soup mix, and pepper in crock pot. Cover and cook on low 8-10 hours. Serve over pasta.

1 lb. ground beef 4 lg. potatoes 1 can green beans 1 can cream of mushroom soup 1 can Cheddar cheese soupPeel potatoes and slice. Place in crockpot. Brown ground beef, drain, and add to crockpot. Add remaining ingredients and cook all day on low.
Sweet & Sour Meatballs (category: ground beef)
2 lbs. ground beef 1 c. brown sugar 3/4 c. water 1 c. catsup 3/4 c. vinegar 1 Tbsp. dry mustardForm ground beef into balls and place in large casserole dish. Mix remaining ingredients and pour over meatballs. Bake uncovered 40 minutes at 350F. If desired, thicken juices with a little flour and water.
