Vikki's Tips
8 tbsp. margarine 8 tbsp. flour 1/2 tsp. salt 2 1/2 c. milk 3 pkgs dried beefChop dried beef. On medium-high heat, melt margarine. Blend in flour. Add salt. Add milk. Stir until creamy. Add chopped dried beef. Mix well. Serve over toast, biscuits, mashed potatoes, or baked potatoes.
Country Fried Steak (category: other beef)
3/4 c. flour 1/4 c. cornmeal 1 tsp. salt 1 tsp. pepper 4 beef cube steaks (about 1 pound) 2 eggs 2 tsp. milk 4 Tbsp. cooking oil, divided (gravy:) 1 Tbsp. pan drippings 2 Tbsp. flour 1 1/2 c. milk 1 tsp. beef bouillon granules 1/8 tsp. pepper dash of saltCombine flour, cornmeal, salt, and pepper. In shallow dish, beat eggs and 2 tsp. milk. Coat steaks in flour mixture, then dip into egg mixture. Dredge in flour mixture again, and let stand 2 minutes.
In a skillet, over medium-high heat (about 360F), cook two steaks in 2 Tbsp. oil for 5-7 minutes on each side, or until crisp and lightly browned and cooked as desired. Remove steaks and keep warm. Repeat with remaining oil and steaks.
Drain off all but 1 Tbsp. of the pan drippings; whisk in flour until well blended, cooking 1 minute. Gradually add the milk/ bring to a boil over medium heat. Boil for 2 minutes, stirring constantly; reduce heat to medium-low. Add bouillon, pepper, and salt; simmer, uncovered, for 4-5 minutes, stirring occasionally.
