Vikki's Tips
1 package corn or flour tortillas 1 can enchilada sauce 1 1/2 lbs. ground beef taco spice 1 can refried beans 1 small can sliced black olives 2 c. grated cheddar cheese jalapenos, optionalBrown ground beef with taco spice. In greased 8x8 cake pan, pour enough enchilada sauce to cover bottom. Lay 1/2 of the corn tortillas in bottom (they can overlap). Spread warm beans (a little water helps) on tortillas. Add the ground beef on top, then 1/2 of the olives and 1/2 of the cheese. Put the rest of the tortillas on top. Cover with the rest of the sauce, then the rest of the cheese, then the rest of the olives. You can mix the jalapenos with the ground beef, or sprinkle them on top, if desired. Bake at 350F for 20-30 minutes, until bubbly.
Chilled Taco Salad (categories: ground beef, mexican, casseroles)
2 lbs. ground beef 1 clove garlic, minced 2 tbsp. chili powder 2 cans kidney beans, undrained 1 32-oz jar taco sauce 2 c. shredded Cheddar cheese 1/2 - 1 head lettuce, shredded crushed tortilla chips optional: black olives, tomato, sour cream
Brown ground beef and garlic in skillet; drain. Return beef to skillet and add 1/2 jar taco sauce, chili powder, and undrained kidney beans. Bring to a boil, simmer 10 minutes.
Pour beef mixture into a large bowl and chill in refrigerator.
Once chilled, add cheese, lettuce, and any optional ingredients desired (except sour cream). Top individual servings with crushed tortilla chips, remaining taco sauce, and sour cream if desired.
2 lbs. ground beef 1 small onion, diced 1 can cream of mushroom soup 1 can Rotel 1 jar taco sauce (or as much as desired) grated cheddar cheese fritos or doritosBrown ground beef with onion. Drain. Mix in cream of mushroom soup, Rotel, and taco sauce. Layer casserole with fritos, meat, cheese, fritos, meat, cheese. Bake at 350F until cheese is melted and bubbly on top.
2 lbs. ground beef 2 tbsp. instant minced onion 16 oz. corn chips, crushed (6 cups crushed) 2 15-oz cans mild enchilada sauce 3 c. (12 oz.) shredded Monterey Jack cheesePreheat oven to 350F. Brown ground beef. Add onion; reduce heat and saute 5 minutes. Drain excess fat. Place 4 cups crushed corn chips in bottom of greased casserole dish. Layer ground beef over chips. Pour enchilada sauce over beef. Top with cheese. Bake 20-30 minutes, or until bubbly. Sprinkle remaining corn chips over top of casserole. Bake an additional 5 minutes.
